This salsa tastes like one of Yuma’s favorite Mexican restaurants Chili Pepper / Mr. G's. It is very simple to make and, by adjusting the chilies, you can make this mild or super hot.
Ingredients:
3 very ripe tomatoes (can use Romas)
2 tsp. salt
4 cloves fresh garlic
1/2 large onion
1 1/2 oz Chili Jalapenos
Dried oregano
Put the tomatoes in a large sauce pan, cover with water and add 1 tsp. salt, bring to a boil and cook until tender. Remove tomatoes and cool until you can remove the core and skins. In a heavy frying pan, toast the chilies until they start to char. Put the chilies into a blender and add some of the hot tomato water, blend on high until the chilies are purred. Add the onion, garlic, and tomatoes, this mixture will be thick. Fill the blender with the tomato water within 1 inch of top. Blend again and add 2 tablespoons oregano and 1 tsp salt, blend.
